From the famous Magliana criminal gang, to the Gipsy Queens: 10 Roma women are now conquering the southern suburbs of Rome. Because in the gypsy encampment at via Candoni, thanks to support from the organisation Arci, they are getting to work in the kitchen to break down stereotypes about Roma people and also earning an honest living. From catering to aperitifs, these enterprising and skilful chefs are cooking up traditional gypsy dishes, such as mico, which is homemade bread with mutton or sarmale, cabbage rolls or vine leaves with rice, vegetables and ground beef. But the cooks don't want to stop there. Their next goal is to buy a camper van so they can run a mobile restaurant, in keeping with the current trend for street food but also with the spirit of Sinti traditions.
